Try Fish of the Day Tartare with sea urchin, seaweed oil, tapioca in soy liqueur, smoked egg custard, Yeast Dough Crab Pie with pear puree, chicken demi glace, Madras curry oil, Dumblings with Rabbit Stew with potato foam, white truffle, onion consomme, shimeji mushrooms, Pressed Hand of Lamb with vacuum-sealed rack of lamb, Jerusalem artichoke "risotto" and pea-wild garlic velouté .
